Varietal Wine Vinegar Minimize

We currently produce five different wine vinegars from grape varietals we grow on our farm. The grapes were planted in 2000, a year before the olive grove, and have now reached a level of maturity that guarantees better fruit quality and therefore better wine and finally vinegar with each passing year. In order to have our vinegars faithfully reflect the characteristics of the given varietal, we produce only 100% varietal vinegars and do not offer any blended product. We currently offer Syrah and Cabernet Sauvignon as our two most robust vinegars, followed by Zinfandel and Grenache and Chardonnay. Our Grenache vinegar is made from Grenache Rose wine and is considerably lighter than our other red wine vinegars, as is the Chardonnay, our only white wine vinegar.

All of our vinegars are aged in oak barrels two years or longer (see production process for details) and have acidity between 5% and 6%. Each is bottled in a beautiful 250 ml amphora-shaped, silk-screened bottle imported from renowned glass-maker Bruni of Italy.
